Ingrediente One lamb with fur on, 4-6 peeled onions, 500 ml white wine, 3 tablespoons salt, 3 tablespoons thyme, 1 tablespoon ground pepper, 2-3 garlic bulbs
Mod de preparare Use the lamb without removing the fur. Slice the lamb's belly, remove the entrails. Wipe it with paper towels and salt it throughout the cavity. Leave it for 15 min, then wash it and drain it well. Chop the onions, add salt and pepper, pour wine over. Sew the belly, then place the (headless) lamb on a spit. Dig a hole, fill it with wood. Light the fire and turn the spit until the fur get burned. The skin becomes crisp as it browns. Sprinkle with wine occasionally.
