Roast turkey with quince sauce (Main course)
Ingrediente
6-7 kg turkey, 200g smoked bacon, 1kg quince, 1 cup broth, 1 cup oil, 2 tbsp sugar, 500g tomatoes, peppercorns, white wine
Mod de preparare
Salt the turkey and let it sit for an hour. Wrap in bacon strips, place in tray with oil and peppercorns. Roast 1 hour per kg. Prepare quince sauce: soften quince slices in oil for 20 min, add sugar and peeled tomatoes. Simmer until consistent. Serve turkey slices over the sauce with champagne.
